Banana Bread

I have been wanting to make banana bread for a while now and finally did for Easter! Wow this recipe was a hit 🤤

 

1 Egg
1/2 cup Walnut flour
2 Tbs Coconut flour
1 TBs Walnut milk
1 Banana
2 tablespoons Apple sauce
1/4 cup Maple syrup 
Vanilla extract 
Sea salt
Cinnamon 


Mix all of the ingredients together and then (if you’re extra like me 😝) place into cute little molds.... or just any nonstick oven safe pan will do! 


Bake for about 30 mins at 400 degrees

Most of my recipes are grain free and dairy free simply because my body has a hard time digesting these foods. Using coconut flour allows this mug cake to have a very similar texture to that of traditional cake. I make my own nut milk at home using just nuts and water and so that is what I used here. I choose applesauce rather than oils because I prefer a more natural and less processed ingredient. It really does work so well as an oil replacer! My sweetener of choice for each of my recipes are either honey, maple syrup or dates. This allows desserts to actually taste like desserts but without all of that processed sugar! Peanut butter is probably my favorite thing in the world so I try to add it to lots of recipes. It really is the perfect way to provide healthy fats and protein while filling you up. I chose to go with 100 percent dark cacao because there is no sugar added. Nothing is added. It is chocolate in its natural form which is rich in antioxidants. Raspberries add the perfect flavor to this mug cake! The sweet and tangy flavor works so well with the bitter chocolate.
